How to Read These Numbers
Dry beans roughly triple in volume during cooking. They absorb water as they simmer, expanding from small hard seeds into the tender, creamy beans we eat. That expansion is why a modest amount of dry beans goes a surprisingly long way.
Soaking overnight does help beans cook more evenly and reduces the total cook time, but it does not dramatically change the final yield. The beans still absorb the same amount of water during the cooking process whether they were soaked or not.
Does Soaking Affect the Yield?
Short answer: not much. Soaking reduces cook time and improves digestibility, but the cooked yield stays roughly the same. What soaking does do is help the beans cook more evenly, so you are less likely to end up with some beans that are mushy and others still firm.
Lentils are the exception here. Because they are smaller and thinner-skinned, they cook quickly without soaking and always yield a consistent result.
Garbanzo Beans vs. Chickpeas: What's the Difference?
They are the same thing. "Garbanzo" is the Spanish name, "chickpea" is the English name. Same bean, same yield, same cook time. If you see garbanzo beans called for in a recipe, you can use chickpeas, and vice versa.

Why Are My Beans Still Hard?
If your beans are still firm after the recommended cook time, there are a few common culprits:
Old beans. Dry beans do not last forever. After about two years in storage, they lose moisture and may never soften fully, no matter how long you cook them.
Hard water. High mineral content in your tap water can toughen bean skins. If you suspect this, try cooking with filtered water or adding a tiny pinch of baking soda to the pot.
Acid added too early. Tomatoes, vinegar, lemon juice, and other acidic ingredients can prevent beans from softening if added before they are fully cooked. Always add acidic ingredients after the beans are tender.
The good news is that most of the time, simply extending the cook time by 15–30 minutes will solve the problem.
