Ingredients
- 1 1/2 cups all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/4 cups buttermilk Don't have buttermilk? See our substitutes
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla extract

- 1Whisk flour, sugar, baking powder, baking soda and salt in a large bowl.
- 2In another bowl whisk buttermilk, egg, butter and vanilla.
- 3Pour wet ingredients into dry and stir until just combined — lumps are fine.
- 4Heat a griddle over medium heat and lightly butter it.
- 5Pour 1/4 cup batter per pancake.
- 6Cook until bubbles form on surface then flip.
- 7Cook until golden on the other side.
- 8Serve immediately with maple syrup.
